Zeaxanthin (3,3'-dihydroxy-β-carotene), also known as Zeaxanthin, is a natural pigment widely found in green leafy vegetables, flowers, fruits, Chinese wolfberry, and yellow corn. It is an oxygen-containing carotenoid that is an isomer with lutein. Most zeaxanthin in nature are all-trans isomers (AlLE-ISo-Mer). This new oil-soluble pigment often coexists with lutein, β-carotene, and cryptoxanthin to form carotenoid mixtures.
