Zeaxanthin, also known as Zeaxanthin, is a new oil-soluble natural pigment that is commonly found in green leafy vegetables, flowers, fruits, Chinese wolfberry, and yellow corn. It is an oxygen-containing carotenoid that is isomeric with lutein. Most zeaxanthin in nature are all-trans isomers. This pigment often coexists with lutein, β-carotene, and cryptoxanthin to form carotenoid mixtures.
